I have been a passionate baker and chocolate aficionado for many years. My beginnings with great chocolate started with my friendship with Michel Jambon, founder of Jeff de Bruges chocolates in Europe. Monsieur Jambon taught me how to appreciate truly fine chocolate and from there my love of superior chocolate grew. I love to focus on combining natural flavors and premium ingredients with the right type of chocolate to create something exceptional. I have complemented my self studies with courses in baking and chocolate at the Cordon Bleu in Paris, France and am a graduate of the Ecole Chocolat Professional School of Chocolate Arts out of Vancouver BC.

Over the last twenty years, I have traveled throughout France exploring foods throughout its regions. My inspiration for the desserts I create comes from the grande chocolate and pastry houses of France, combined with the desires of my customers.

I have provided my chocolate desserts for events and on restaurant menus in the Dallas area for the last 5 years.
